WSL-17 (Saccharomycodes ludwigii)
The WSL-17 is used for the production of low-alcohol or alcohol-free beers (max. 0.5 Vol.%). This yeast strain can ferment only glucose, fructose and sucrose from the carbohydrates in a beer wort. Thus the WSL-17 achieves a degree of fermentation of approx. 12-15%. (Adjusting the pH of the wort is recommended.)
Recommended fermentation temperature: 14-15°C (13-16°C), higher temperatures possible
