W210 (Saccharomyces cerevisiae)
The W210 is one of our classic "Stout yeasts". In addition to the various Stout specialities, this yeast is also ideally suited for the production of various Ale and Porter variants. (English ale tends to be more suitable.)
- good ester production, complex ester profile
- normal to increased amount of higher alcohols
- normal settling behaviour
- good diacetyl reduction
- normal AV°
- high alcohol tolerance
Recommended fermentation temperature: 18-23°C (20-21°C)
In the production of Stout, notes of chocolate and caramel candy can be observed in beer.
